The Dorchester Hotel's restaurant was overseen by Swiss chef and restaurateur Anton Mosimann for thirteen years, during which time it received a two-star rating from the Michelin Guide. Following his departure from The Dorchester, Mosimann established Mosimann's, a culinary school, and various ventures in the hospitality sector before taking over a private dining establishment named The Belfrey. At César Ritz Colleges, which are situated in the village of Le Bouveret on the banks of Lake Geneva (lac Léman), a museum honoring his life and the culinary skills was inaugurated in 2016 there. Mosimann refers to his cooking approach as "natural" since it places an emphasis on fresh, nutritious foods and stays away from added fats and alcohol.
